Pongal

What

Pongal centers on cooking a sweet rice dish, also called pongal, in a clay pot that is deliberately allowed to boil over as a symbol of abundance, offered first to the sun before the family shares it.

Why

The festival gives thanks across its four days to the sun, the earth, and cattle in turn, for the year's harvest — a direct, unambiguous festival of agricultural gratitude, with the boiling-over pot itself acting as the literal, visible symbol of the surplus being celebrated.

Preparation

  • Prepare a small pot of sweet pongal, letting it boil over if you can manage it safely
  • Decorate the cooking space with sugarcane and turmeric leaves
  • Set aside a portion to offer to the sun before eating
  • If possible, express thanks to any farmers in your own supply chain
